Protein Pancake (for kids)
1/2 banana – mashed
few dashes of cinnamon
1. Spray small non-stick pan with cooking spray (I use the smallest of my set of pans) and heat on low to low-medium
2. Mix/mash the banana with the egg, add the cinnamon and mix well
3. Pour mixture into the pan and cook until it’s not runny when you shake the pan back & forth, carefully lift around the edges with a rubber spatula (bottom should be lightly browned) then flip quickly (texture is thin and delicate, almost like a crepe). Cook another minute or two until brown.
I make these single-serving “pancakes” all the time for my daughter, she loves them!
