Perfect Pancakes

INGREDIENTS:

1 1/2 cups flour

3 1/2 teaspoons baking powder

1 teaspoon salt

1 tablespoon white sugar

3 tablespoons melted butter

1 egg

1 1/4 cups milk

1 cup frozen blueberries (optional)

* Sometimes I will substitute a bit of wheat flour into the regular flour

DIRECTIONS:

1. Defrost frozen blueberries (to be stirred in after batter is mixed)

2. Combine all dry ingredients (flour, baking powder, salt, sugar). Add the milk and egg into the dry mix and combine. Slowly drizzle the melted butter into the mixture while stirring. Finally, gently mix in the blueberries.

3. Heat a lightly oiled/buttered/sprayed (I prefer buttered) pan to medium temp. Pour and cook medium sized pancakes until top is bubbly, flip and brown remaining side.

Makes 6-8 pancakes, depending on size 

I make these at least once a week, sometimes more often! Happy Eating.
