Mom’s Quiche (no crust)

INGREDIENTS:

3/4 cup flour

2 eggs (beaten)

1 cup milk

8 ounces shredded cheese (I like pizza blend)

1/4 teaspoon pepper

1/2 teaspoon salt

2 cups filling (meat, broccoli, onions, bell peppers, etc…)

DIRECTIONS:

1. Pre-heat oven to 450 degrees

2. Spray round pie plate with cooking spray

3. Mix all ingredients together, pour into pie plate

4. Reduce oven temp to 350 degrees, then bake 30-35 minutes until golden

* I almost always use onions as part of the filling, but avoid items that may cause the quiche to become watery (like tomatoes).

This recipe is great for cleaning out the refrigerator. Picture below: made with left over pulled pork & spinach
